The "HSE Pedro Ximénez Finish" was produced in Martinique at the Distillerie du Simon distillery. It was distilled in 2007 from Sugar cane juice with a Creole Column. The rum has an ABV of 46%. #5067 Friday 24.01.2025 - 26.01.2025 A nice weekend in my sisters summerhouse with old friends and colleagues tasting a lot of rums. I can only recommend like we did, no phones allowed and then only music in the background 😊 Colour Dark. Nose Wood, sherry, light grass, fruits, lightly sweet, honey, spice, Agricole. Palate Light oily, wood, light roasted, light vegetal, sherry, fruits, light citrus, sugarcane, round. Finish Medium to long, wood, sherry, light roasted, sugarcane, spice. Empty glass Sugarcane, light nutts, spice, faint caramel. This rum has to rest for a while for it to settle properly or the ABV will take over.
Retasting: not as bad as it seemed on first taste, quite agreeable actually. Upping to 7.9. Way too PX sweet on the palate to be a comfortable sipper, but not sweet enough to be something I would recommend as a digestif either. Sherry seems a gamble to finish with, it can strike gold but it sure can misfire too. Imo this leans towards the latter, the rum aspect of this is completely overshadowed by the overly strong PX finish.

Kleines HSE Tasting: Sehr leckers Finish das beste im Tasting. Schöne Fruchtigkeit gepaart mit Agricloe. Für mich gleichauf mit dem Single Cask. Schöne Tiefe und die Nase macht sofort Lust auf mehr. Sehr lecker 😋
