The "Guyana Single Cask" was produced in Guyana at the Diamond distillery. It was selected and bottled by the independent bottler Mezan. It was distilled in 2004 from Molasses and then aged for 19 years. The rum has an ABV of 57,1%. Typical 2004 Diamond Versailles style. This one is not colored, nice fruity and astringent pencil notes.
Quite disappointed when I opened it, I thought the alcohol was too present; I gave it time and... it's much better now. The fruit (orange, tangerine) on the nose gives way to the typical Guyana caramel on the palate, some dried fruit and a little salt. There's a twist between the nose and the palate, but otherwise it's a bit "straight" and simple. A no-fuss treat for dessert.
